Second flush Darjeeling is picked in early summer, when the leaf has more body and a distinct grape-skin note. We buy whole leaf, not fannings, so the liquor stays clear and the cup can be poured twice.
Use freshly drawn water just off the boil. Three minutes is enough. Drink without milk if you want the muscatel; with a little milk if you prefer it rounded.
